Ingredients

  • 2 lbs chicken thighs
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon black pepper

Equipment

  • Oven
  • Baking tray
  • Small bowl
  • Paper towels
  • Brush

Method

  1. Preheat your oven to 400 degrees F (200 degrees C). Have a large baking tray ready.
  2. Place the chicken thighs on the baking tray. Pat them dry with paper towels to help the seasoning stick.
  3. In a small bowl, combine the olive oil, garlic powder, dried oregano, salt, onion powder, sweet paprika, and black pepper. Stir well.
  4. Brush the seasoning mixture all over the chicken thighs, ensuring they are completely coated.
  5. Bake the chicken for about 40 minutes, or until it is cooked through. You can garnish with chives or parsley if desired.

Notes

This recipe is very adaptable. Feel free to add other spices you have on hand, such as thyme or rosemary. For crispier skin, you can broil the chicken for the last 2-3 minutes of cooking, watching it closely to prevent burning.
