Chicken Thighs
  • 8 chicken thighs (bone-in, skin-on)
Seasoning
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1.5 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper

Method
 

  1. Preheat your oven to 425°F (220°C). Remove the chicken thighs from the fridge and let them come to room temperature. Pat them dry with a paper towel. In a small bowl, mix all the herbs and spices together for the seasoning.
  2. Place the chicken thighs in a large mixing bowl. Add the olive oil and two-thirds of the spice blend. Use your hands to coat all sides of the chicken, ensuring some seasoning gets under the skin.
  3. Arrange the seasoned chicken on a wire rack placed on top of a baking sheet. Sprinkle the remaining spice mix over the chicken.
  4. Bake the chicken thighs for 35 to 40 minutes, or until the internal temperature reaches 170°F. For extra crispy skin, you can turn on the top broiler for the last 2 to 3 minutes. Let the chicken rest for 5 minutes before serving.
