Ingredients
  

For the Chicken
  • 8 bone-in, skin-on chicken thighs
  • 2 tbs olive oil
  • 3 tbs tomato paste
  • 2 tbs Greek yogurt
  • 5 cloves garlic sliced
  • 1 1/2 tsp salt
  • 1 1/2 tbs smoked paprika
  • 1 tbs oregano
For the Herb Sauce
  • 4 tbs Greek yogurt
  • 1 handful mint or cilantro
  • 1/2 jalapeno
  • 1 tbs olive oil
  • 1 tbs red wine vinegar
  • 1 pinch salt

  • Baking sheet
  • Wire rack

Method
 

  1. Place chicken thighs in an oven-safe baking dish. Marinate the chicken with olive oil, tomato paste, Greek yogurt, garlic, salt, smoked paprika, and oregano. Massage the ingredients into the chicken and let it marinate for at least 1 hour, or overnight for deeper flavor.
  2. Preheat your oven to 450°F (230°C).
  3. When the chicken is done marinating, arrange it on a baking sheet lined with a wire rack. If you don't have a wire rack, place the chicken directly on the baking sheet, ensuring not to overcrowd the pan. Bake for 35-40 minutes.
  4. While the chicken bakes, prepare the herb sauce. Combine the yogurt, herbs, jalapeno, olive oil, red wine vinegar, and salt in a blender. Blend until smooth.
  5. Serve the baked chicken thighs with rice or a salad, and drizzle with the herb sauce.

Notes

For best results, marinate the chicken overnight. Ensure the chicken skin is dry before baking for maximum crispiness.
